The other day I came home exhausted from a full day of calls. You know the kind of day…..where you just don’t think you’ll even make it in the door! The last thing I wanted to think about was what to make for dinner. One very smart person in our house suggested having tea for dinner. BRILLIANT!
So what did dinner consist of? Quite simply, a great big pot of blooming earl grey tea, and some of the best cheese biscuits, preserves, butter and cheddar I’ve ever had. It was wonderful! Definitely going to be a new tradition at our place!
For all you who need a break from the normal, everyday dinner fare, here’s a scrumptious recipe for melt in your mouth drop cheese biscuits!
Basic Cheese Biscuits
Preheat oven to 425 F.
Sift together in a bowl:
2 c. sifted flour
3 tsp. baking powder
1/2 tsp. salt
1 c. grated cheese
Cut in:
1/4 c. shortening (I substitute coconut oil – no trans fats for me!)
Add all at once, stirring just until mixed:
1 c. milk
Drop onto ungreased cookie sheet by tablespoonfuls and bake 10-12 minutes. Serve hot.
Makes 18-20
