The other day I came home exhausted from a full day of calls.  You know the kind of day…..where you just don’t think you’ll even make it in the door!  The last thing I wanted to think about was what to make for dinner.  One very smart person in our house suggested having tea for dinner.  BRILLIANT!

So what did dinner consist of?  Quite simply, a great big pot of blooming earl grey tea, and some of the best cheese biscuits, preserves, butter and cheddar I’ve ever had.  It was wonderful!  Definitely going to be a new tradition at our place!

For all you who need a break from the normal, everyday dinner fare, here’s a scrumptious recipe for melt in your mouth drop cheese biscuits!

Basic Cheese Biscuits
Preheat oven to 425 F.

Sift together in a bowl:

2 c. sifted flour

3 tsp. baking powder

1/2 tsp. salt

1 c. grated cheese

Cut in:

1/4 c. shortening (I substitute coconut oil – no trans fats for me!)

Add all at once, stirring just until mixed:

1 c. milk

Drop onto ungreased cookie sheet by tablespoonfuls and bake 10-12 minutes.  Serve hot.

Makes 18-20

Okay, okay….I know!  It’s been FOREVER!  And I honestly have no excuses (except for December was CRAZY busy, and then lost of travelling, and a conference….but other than that there’s no excuses!)

Today’s post is not for any other reason than to just say “hello” and slowly break back into the routine.  You’ll be happy to know our readers have a hefty advocate in my hubby, who diligently, and daily asks if I written anything on the blog lately!  Thanks for the prodding!

So, tomorrow we leave Oklahoma for Toronto yet again, and I promise to get back into the swing of things, answer the 352 e-mails in my inbox, and drink more tea!
